
Here's everything you need for this tantalizing Thai beef and broccoli stir fry. Note that you can use either red chilies or crushed chili or chili flakes for this recipe.

Ingredients To Gather:
- 1/2 to 1 lb. (0.45 kg) beef steak or other cuts
- 1 medium head broccoli, cut into bite-size florets
- 1 red pepper, sliced into thin strips
- 1 shallot OR 1/4 cup purple onion, finely chopped
- 3-4 cloves garlic, finely chopped
- 2 thumb-size pieces ginger, thinly sliced into matchstick-like pieces
- 3 Tbsp. sherry (or cooking sherry), or red wine
- 1 tsp. cornstarch dissolved in 3 Tbsp. cool water
- 1 tsp. sesame oil
- 2-3 Tbsp. vegetable oil
- MARINADE:
- 3 Tbsp. soy sauce
- 1 tsp. brown sugar
- 1 tsp. cornstarch
- STIR-FRY SAUCE:
- 1/2 cup good-tasting chicken stock
- 3 Tbsp. oyster-flavored sauce
- 1 Tbsp. fish sauce
- 1 to 2 tsp. brown sugar, to taste
- 1-2 red chilies, minced, OR 1/2 to 3/4 tsp. dried crushed chili (chili flakes), to taste
Directions To Follow:
Start by cutting the steak at an angle (this is called cutting on a bias). Cut the meat into strips measuring 2- to 3 inches long and then place in a bowl. Mix all of the ingredients for the marinade in a small bowl or cup, ensuring that the cornstarch dissolves. Then, pour the marinade over the beef and toss so that the meat is evenly coated. Set the meat aside to marinade and mix all of the stir fry seasoning ingredients together, making sure the sugar dissolves completely. Set it aside and heat a wok or a large frying pan over medium-high heat and add oil. Swirl the oil around to coat the pan, and then add the ginger, garlic, and shallots or onions. Stir fry for 1 minute. Next, add the beef and all of the marinade to the pan and stir fry for between 4 or 5 minutes or until it's browned. While you're cooking, add the sherry to the pan to keep everything moist. Next, add the red pepper, broccoli, and stir fry sauce, and then reduce heat to medium and simmer for 5 minutes. Stir occasionally and cook until the vegetables have started to soften but are still somewhat crunchy. Next, combine the cornstarch and water mixture and add it to the stir fry sauce in the wok to thicken it. You may need to push the meat and vegetables to the side to get to the sauce. Continue to stir fry, then turn off the heat and drizzle the sesame oil over the entire mixture.
We just can't get enough of this tempting Thai stir fry! You can tweak this dish just to your liking, by adding more fish sauce if you need more salt or if it seems a little flat, while lime or lemon juice cuts the salt and sugar makes it a little sweeter.
