You’ve Had Pork Chops Before, But Have You Had Them Like This? The Sauce Is To Die For!

Here's everything you need for these rich and hearty grilled Mongolian pork chops. You don't have to cook them on the grill, but the smoky flavor really enhances them.

Let's Get Started… 

Ingredients To Gather:

  • 1/2 cup hoisin sauce
  • 4 cloves garlic, minced
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon red wine vinegar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sherry vinegar
  • 2 teaspoons sesame oil
  • 2 teaspoons white sugar
  • 1 1/2 teaspoons hot sauce
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon freshly ground black pepper
  • 2 (10 ounce) thick bone-in center cut pork chops
  • 1/4 cup red wine vinegar
  • 3 tablespoons white sugar
  • 2 tablespoons hot mustard powder
  • 1 egg yolk
  • 1/3 cup creme fraiche
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon ground turmeric
  • cayenne pepper to taste

Directions To Follow:

  1. Start by combining the hoisin sauce, garlic, soy sauce, ginger, 1 tablespoon red wine vinegar, rice vinegar, sherry vinegar, sesame oil, 2 teaspoons sugar, hot sauce, white pepper, and black pepper in a large bowl, whisking all of the ingredients together.
  2. Next, put the pork chops in a resealable freezer bag, and then add a little over half of the marinade.
  3. Close the bag and refrigerate for between 6 and 8 hours and reserve the rest of the marinade.
  4. Next, add 1/4 cup red wine vinegar, 3 tablespoons sugar, 2 tablespoons hot mustard powder, and egg yolk to a small saucepan and heat over medium-low heat, whisking until the mixture thickens slightly, usually about 5 minutes.
  5. Remove from the heat and then add the creme fraiche, Dijon mustard, turmeric, and cayenne pepper, stirring to combine.
  6. Refrigerate the mixture until you're ready to use.
  7. After this, remove the pork chops from the marinade use a paper towel to pat them dry, and the preheat an outdoor grill, setting it to high heat.
  8. Lightly oil the grill's grate and then cook the pork chops for about 4 minutes on each side or until noticeable grill marks form.
  9. Move the pork chops to the side so they're not directly above the heat source, and then cook over indirect medium heat and add the rest of the marinade to each side.
  10. Cook for about 25 minutes or until they're no longer pink inside.

We really like these pork chops with a couple of vegetable side dishes — asparagus is one of our favorites to have with this savory main course, but any veggie will do.
