
Preparation:
Step #1: In a medium boiling pan, boil 8 cups of water and stir in the rice, bringing to a boil. Reduce heat and cover. Continue stirring occasionally until rice thickens and is soft. Set aside.
Step #2: Chop individually the thyme, garlic cloves, bay leaves, and parsley.
Step #3: Dice mushrooms and add to the spice mixture.
Step #4: On medium heat, pour olive oil into medium frying pan. Add in the chicken and fry until brown on both sides.
Step #5: Add brandy and wine to the chicken, cover and let simmer for 10 minutes. Turn the chicken over and simmer for another 10 minutes.
Step #6: Once chicken has simmered, turn on low heat and stir in chicken broth. Turn the chicken over after 5 minutes and continue to cook for another 5 minutes.
Step #7: Add in the mushroom/spice mixture to the chicken and cook until mushrooms are tender.
Step #8: Stir in the butter and whipping cream and stir continuously until creamy texture.
Step #9: Pour the rice in with the chicken, stir until rice is blended together with ingredients.
Step #10: Time to eat and enjoy
