All you need is a peeler and a grater, along with your hands for tearing up this amazing combination of veggies and herbs.

This noodle bowl is packed with goodies such as cabbage, carrots, zucchini, mint, basil, and cilantro. Plus, it's topped with a delicious soy lime vinaigrette dressing made from soy sauce, lime juice, honey, garlic, ginger, Asian chile-garlic paste and other amazing ingredients. Toss a few peanuts on top, and you have one heck of a summer meal that's perfect for lunch or dinner.

Plus, you can make the dressing up to five days in advance and store it in the fridge, and any leftovers will keep in the fridge for up to two days.
