4 Meals: 1 Rotisserie Chicken A Great Value Packed With Flavor

When looking to cut corners any way you can meal prep is always a great place to start. By planning out our meals we get rid of a lot of food waste and in turn save money. As you will see later in this article there are 4 ways to get the most out of a rotisserie chicken. Granted if you have a large family you may need more than one but you get the idea.

The first meal we want to look at is the weekend takeout staple, Chicken Fried Rice. This is one of my favorites because I love takeout food. It's not the healthiest but there is something about it that makes me look forward to the weekend! Here is what you will need to make this dish.

Ingredients:

  • 1 tablespoon cooking oil, of preference
  • 1 clove garlic, minced
  • ¼ cup white onion, diced
  • 1 carrot, sliced
  • ¼ cup frozen corn
  • ¼ cup frozen pea
  • 1 cup brown rice, cooked
  • 1 cup rotisserie chicken, shredded
  • 1 egg, scrambled
  • 1 tablespoon soy sauce
  • ½ tablespoon sesame oil
  • salt, to taste
  • pepper, to taste
  • green onion, for garnish
  • sesame seed, for garnish

Directions: 

  • In a large skillet heat oil over medium heat. Add garlic, onion, carrot, corn, and peas. Cook until carrots are tender, stirring occasionally.
  • Add brown rice, chicken, egg, soy sauce, sesame oil, salt, and pepper to taste, and stir. Cook for another minute, or until everything is heated thoroughly.
  • Serve with a sprinkle of sesame seeds and green onion.
