What You Will Need:

  • 1 medium onion, peeled

  • 4 large russet or Idaho potatoes (about 3 1/2 pounds), peeled

  • 2 large eggs

  • 2 tablespoons all-purpose flour

  • 6 tablespoons vegetable oil

  • 6 tablespoons unsalted butter

  • Applesauce and/or sour cream, for serving

How To Prepare:

  1. Start out by preheating your oven to 200 degrees farenheight. While it's warming, keep the baking sheets in the oven as well.
  2. Grate onion and potatoes. Place them both in a strainer to remove excess liquid.
  3. Use a whisk to mix eggs and flour.
  4. Try and get as much liquid out of the potatoes and onions as possible. Then you'll want to add your egg mixture to the potato onion mixture in a large bowl. Season to taste with salt and pepper.
  5. Now that you have your potato mix prepped, heat up a skillet with oil for frying. Scoop amounts of mixture and drop on skillet, then pressing with a spatula to form a pancake. Cook on each side until golden brown. Transfer to paper towels and let rest while the extra grease is absorbed by the paper towels.
  6. Keep potato pancakes on baking sheets in oven to stay warm until ready to serve.
