Fresh Vegan Ratatouille Casserole Inspired By Julia Child’s

Who didn't love Julia Child's and her many different dishes that she made? This woman clearly knew how to cook and in my book she is still the best today.

This dish, which was adapted to be vegan, used to be Julia's favorite. She loved how all of the fresh flavors melted together and how you can serve this either hot or cold the next day.

A classic french ratatouille is a stew but you can adapt it to just have the flavorful parts and omit the meat.

Surprisingly, this dish really does not take that long to make; in fact the only time consuming part is cutting the vegetables really thin and placing them in the oven.
