Grandma’s Corn Pudding

The first time I had corn pudding I honestly had no idea what it was. Granted, I was a young child and as long as the food tasted good that was all that mattered, and if Grandma cooked it…it was always good!

Corn pudding was always a staple at our holiday meals. It was expected and if it wasn't there it just didn't seem right. Every family has those dishes where even if no one eats them they simply have to be on the table for it to truly feel like a holiday meal! For our family, it was grandma's corn pudding.

For those of you who are unaware of the greatness that is corn pudding let me explain. It's not a dessert. It's actually a delicious side dish that is best paired with a roast or ham. This is why many save it for special occasions or holiday meals. It starts with a simple white sauce and is then built up corn and a few extra ingredients to make a delicious casserole-like consistency. In fact, let's look now at the ingredients you will need to make this dish.

Ingredients: 

  • 4 tablespoons butter
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cup milk
  • 1 can (approx. 15 ounces) cream-style corn
  • 1 can (approx. 15 ounces) whole kernel corn, or about 2 cups frozen thawed
  • 3 eggs, separated

Now that we have all those ingredients together it's time to put them to use. Let's look at the five-step process to complete this dish.

    2 cans creamed corn, 1 package Jiffy Mix and a small container sour cream. Easiest and best. Add salt and pepper an sometime a green chopped pepper. A breeze and killer. Cook on 375 for an hour, puffs up life a soufflé.
