Eggplant has always been one of those things in the grocery store that I just walk right past.
Not that I have any aversion to the vegetable I am just as graceful as a three-legged dog in a china shop when it comes to preparing it.
Wel it was time to face my fear and learn how to hand this culinary adversary.
In my journey here are 4 awesome ways I have learned to cook with eggplant.

No meat spaghetti, use zucchini and or yellow squash in place of meat !! Delicious..
Dip in egg wash then in Parmesan cheese. Fry with Pam or bake in oven !!
Slice eggplant wrap in aluminum foil; place in garbage; barbecue a steak of your choice; enjoy with corn on the cob, acorn or butternut squash, tossed salad.

Dip slices in egg first then in flour and fry them up in a frying pan with a little bit of oil.
