How to Make Amazing Slow Cooker Barbacoa Beef

If you are familiar at all with Caribbean or Mexican cuisine then you are familiar with the term Barbacoa Beef. Normally it is a method used to slow roast sheep in a pit covered with a particular kind of leaf. Even the more modernized version used a similar method but with cow, goat or lamb….this is neither of those. but as you will see later in this article it is just as good!

This method is a take on the Americanized Chipotle recipe they use in their burritos. Let's all agree that Chipotle is life when it comes to fast food burritos. Sorry Taco Bell, you're great at 2 am after a night out but Chipotle has a corner on the fast food burrito market when it comes to quality and taste. Here are the ingredients you will need to make this dish.

Ingredients:

1 tablespoon oil
2 pounds chuck roast, fat trimmed and cut into 1-2 inch chunks
1 white onion, diced
4 cloves garlic, chopped
1 tablespoon ground cumin
1 tablespoon oregano
1/2 cup beef broth or beer or water
4 chipotle chilies in adobo sauce, chopped (or to taste)
1/4 cup fresh lime juice
2 tablespoons apple cider vinegar
2 teaspoons salt
1 teaspoon pepper
1/4 teaspoon ground cloves
3 bay leaves
12 small corn tortillas, warmed
1/2 cup onion, diced
1/4 cup cilantro, torn
