How To Use The Oven To Make The Worlds Best Red Sauce !

I am sure that there are going to be those of you who disagree with this method but before you gather your Grandmothers and pitchforks let's look at this technique with an open mind.

Every pasta dish starts off with one thing, a well cooked, preferably homemade, batch of pasta noodles. This is the foundation of any good Italian dish! Yet there is one thing that brings everything together, one thing that generation upon generation of family chefs and cooks have debated about for centuries and that is the red sauce!

Every family in every region has their own way of doing things and if you ask them their way is the right way, but what if we told you that the right way may not be the way you thought it was? What if we told you that rather than make your sauce on the stove, it's best to make it in the oven!

Keep in mind this is not the simple store bought sauce you heat up or even the thin marinara you pour over a weeknight pasta dinner. This is the kind of sauce you work at. The kind of sauce that takes hours to prepare as your home fills with the most wonderful of aromas. This is the sauce that defines thousands of restaurants and eateries across the globe! This sauce is not for the faint of heart when it comes to preparation. In fact, let's take a look at the ingredients to see what we will need to gather.

Ingredients:

  • 4 (28-ounce) cans whole peeled tomatoes, preferably imported D.O.P. San Marzano tomatoes (see note above)
  • 1/4 cup extra-virgin olive oil, plus more for finishing.
  • 4 tablespoons butter
  • 8 cloves garlic, minced (about 3 tablespoons)
  • 1 teaspoon red pepper flakes
  • 1 tablespoon dried oregano
  • 1 medium carrot, cut into large chunks
  • 1 medium onion, split in half
  • 1 large stem fresh basil
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon fish sauce (optional)
  • 1/2 cup minced fresh parsley or basil leaves (or a mix of the two)
