If You Like A Perfectly-Seasoned Burger (With A Kick) Then Check Out These Guanajuato-Style Pacholas

This recipe makes enough for about sixteen servings so there should be plenty for your family and friends to enjoy. You can serve these with a simple salad, guacamole. , or any of your favorite toppings.  These are made using a tortilla press but a rolling pin will work as well. You can save some time and make the sauce for these ahead of time. Once prepared, they take only about a minute or so to fry on each side, so your guests won't have to wait long to start enjoying them!

Let's Get Started…

The Ingredients To Gather:

  • 1 cup water
  • 3 ancho peppers
  • 3 cloves garlic
  • 10-12 oregano leaves
  • 1 lb ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon cloves
  • 1 egg
  • 1/4 cup garlic & herb bread crumbs
  • Oil for frying

The Step By Step Directions To Follow:

  1. Heat water. Add peppers, garlic when it boils, boil a few minutes. Lower heat, cover pot, sit 15 minutes. Water should cover peppers.
  2. Place peppers, garlic, oregano 4 tablespoons of water in blender, mix until paste forms.
  3. Pour sauce over meat, add salt, ground cloves, egg, breadcrumbs.
  4. Combine.
  5. Divide meat in half , in half again.
  6. Continue until you have 16-18 balls of meat 1 1/2 inch in diameter.
  7. Cut wax paper big enough to cover surface of press. Place ball in middle, create “tortilla.” Ball should be in between two layers of wax paper.
  8. Remove tortilla, place over piece of parchment paper.
  9. Heat 1/2 an inch of oil .
  10. Fry pacholas , 1 minute or less on each side.
