The Classic Scotch Egg With a Twist

These are perfect for busy weekend mornings or that brunch you committed yourself to before knowing how tired you were going to be. Yeah, I've been there too many times to count. The best part of this dish is not only the flavor but the fact that it is geniunly a full breakfast meal that will fill you up after one or two. That is however if you have a somewhat normal appetite. If you happen to have teenagers you may want to make more than advised.

Directions:

  1. Bring a medium pot of water to a boil and carefully place eggs in, go slow to make sure eggs don’t crack! Lower temp to medium-high to maintain a gentle boil, boil for 6 ½ minutes exactly! Using slotted spoon pick up eggs and place in ice water to stop the cooking process immediately! Cool completely before continuing, approximately 5 min.
  2. Carefully peel eggs, making sure not to damage egg.
  3. Flaten sausage meat into circles just big enough to thinly wrap around the egg. Place in fridge to chill for 10 min.
  4. Meanwhile set up the breading station, eggs, flour and potato chips in separate bowls. Carefully (of course) place egg in flour, egg then breadcrumbs.
  5. Heat oil to 350 in deep pot or deep fryer place eggs in for 4-5 minutes or until golden.
  6. Breakfast is the most important meal! Enjoy!
