These Chocolate and Pecan Cookies Are One Heck of a Sweet Treat!
We like pretty much every type of cookie, from rich and gooey chocolate chip to light and sweet sugar cookies. However, we recently discovered a cookie recipe that we're pretty sure is going to be our all-time favorite. It's a chocolate chip cookie that uses roasted pecans, and boy is it delicious! The pecans are toasted for a deeper, rich flavor, and there's roasted coconut in there as well. Instead of using ordinary chocolate chips, this recipe calls for chocolate chunks, which melt in your mouth and are incredibly indulgent.
Another thing that makes these cookies special is their size. They're what's known as bakery style, which is a little larger than your usual cookie. This is important because that larger size is what makes it possible to have such a crispy edge along with that nice gooey center. Yum!
So let's take a quick look at the ingredients you will need to make these delicious cookies.
Ingredients to Gather
1 1/2 cups plus 2 tablespoons (145 g) sweetened shredded coconut
2 1/4 cups (290 g) pecan halves, divided
2 cups (240 g) all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (225 g) unsalted butter, at room temperature
3/4 cup plus 2 tablespoons (160 g) lightly packed brown sugar
1/2 cup (100 g) granulated sugar
1 large egg, at room temperature
1 large egg yolk, at room temperature
2 teaspoons pure vanilla extract
12 ounces (340 g) semisweet chocolate, chopped into 1/2-inch (1.3 cm) chunks
