This recipe makes enough for about four servings but you can always double the ingredients if you want more. They take about forty minutes to prepare and about seven to ten minutes to cook. They will smell so wonderful, you won't want to wait to try them!

The Ingredients To Gather:
3 tablespoons olive oil
1/2 fennel bulb
1/2 onion
3 large shallots
4 large garlic cloves
3 tablespoons anchovy paste
1/4 cup tomato paste
1 can diced tomatoes in juice
1 cups dry white wine
1/2 cups clam juice
salt and pepper to taste
1 1/2 lbs mussels
1 cup chopped parsley
red peppers
lemon wedges
The Step By Step Directions To Follow:
Heat oil in saute pan over medium heat. Add fennel, onion, shallots, saute until onion is translucent, about 10 minutes. Add garlic, saute 2 minutes. Stir in tomato paste. Add tomatoes with their juices, wine, clam juice. Cover, bring to simmer. Reduce heat to medium-low. Cover, simmer until flavors blend, 30 minutes. Salt, pepper to taste. Strain, discard solids if desired. Add mussels to cooking liquid. Cover, cook until mussels begin to open, 7-10 minutes. Ladle mussels, broth into bowls, sprinkle parsley and red peppers on top. Serve with lemon wedges and bread.
