This Chicken, Mushroom & Wild Rice Recipe Will Have You Going Back For Seconds & Thirds!

Here's all of the information you'll need to try this recipe for yourself. Trust me… No matter what the occasion this recipe is a great idea to have. Besides… all of the ingredients are light.

Ingredients to Gather:

  • 1 ounce dried morel mushrooms (or substitute other dried mushrooms)
  • 4 tablespoons Organic Valley Butter
  • 1 cup finely chopped onion
  • 1⁄4 cup flour
  • 1 1⁄2 cups chicken stock
  • 1 cup Organic Valley Half & Half (or Heavy Cream)
  • salt & pepper to taste
  • 2-3 cups Organic Prairie Chicken Breast, cooked, cut into chunks
  • 4 cups wild rice, cooked, than measured
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • 3-4 tablespoons Organic Valley Shredded Parmesan (optional)

Directions to Follow:

Start by softening the mushrooms with boiling water and then chopping them into small pieces. Melt the butter in a saucepan and add the onions and then stir in the mushrooms. Turn the heat down to low, cover the vegetables with flour, and then cook 4 to 5 minutes, stirring frequently. Mix the chicken stock and cream separately and microwave for between 3 and 4 minutes. Add this to the vegetables and simmer the entire mixture and then add salt and paper to taste.

Now, you're ready for the final touches:

4. Combine vegetable mixture with chicken, wild rice, parsley and thyme. Add more salt and pepper, if needed. Spread mixture in a buttered casserole dish. It can be covered and refrigerated at this point or baked immediately.

5. Bake at 350 degrees until heated through, 35-45 minutes. If you’re using Parmesan, sprinkle it over the hot dish after the first 20 minutes of baking time.

What we really like about this dish is that it's so easy to make it feels like convenience food, but it incorporates natural ingredients — like parsley, thyme, chicken, and wild rice — that your guests might think you gathered up yourself! Don't worry, though: your secret's safe with us. We won't tell them if you won't! However, with a dish this appetizing, don't be surprised if they ask for the recipe.
