This Cuban Recipe For Slow Cooker Ropa Vieja May Be The Tastiest Thing We Ever Made In Our Crock Pot!

This amazing Cuban dish makes enough for six to seven servings but you can always double the ingredients if you would like left overs to enjoy again for another meal. You can also use flank steak or brisket for this dish.

Let's Get Started!

The Ingredients To Gather:

  • 1 tablespoon canola oil
  • 2 pounds London broil or boneless chuck roast
  • Kosher salt
  • black pepper
  • 1 carrot
  • 1 Cubanelle pepper or green bell pepper
  • 1 red bell pepper
  • 1 onion
  • 1 whole head of garlic
  • ½ cup dry white wine
  • 2 cups anned tomato puree
  • 1 6-ounce can tomato paste
  • 1 cup chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • ½ cup sliced green olives
  • 1 tablespoon white vinegar
  • ½ cup cilantro leaves
  • 1 lime or two

The Step By Step Directions To Follow:

  1. Season meat on both sides with 1 teaspoon salt, black pepper. Heat oil in a heavy skillet.
  2. Brown meat over high heat for 3 minutes per side.
  3. Transfer to the bowl of a slow cooker. Toss in sliced carrot.
  4. Add a tablespoon of oil to the skillet along with garlic, onions, peppers.
  5. Turn heat down to medium.
  6. Cook for 6-7 minutes until the vegetables are softened and starting to caramelize, stir.
  7. Add wine, simmer for a minute. Transfer the mixture to the slow cooker.
  8. Whisk tomato puree, tomato paste, broth, dried spices, 2 teaspoons salt.
  9. Pour over meat. Cook on high for 6 hours.
  10. After 5½ hours stir in olives and vinegar

Serve & Enjoy!
