This Passion Fruit Cake Is So Light and Fluffy It Practically Floats!

When the weather heats up, we usually go off in search of light, moist and tender dishes that can help take a little edge of that hot sultry weather. This includes our choice of dessert. We're still big fans of rich, decadent chocolate cake, don't get us wrong, but we increasingly find ourselves drawn to lighter, fluffier fare, in particular anything fruit-based. Spring and summer are the ideal time to indulge in fruit, after all, and there's just something about that juicy sweetness that's incredibly refreshing when the weather is warm.

One of our favorites is this passion fruit chiffon cake. Chiffon cake is light, fluffy and moist, and the perfect treat to reward yourself and satisfy your sweet tooth without being heavy or overwhelming. Plus, the passion fruit is incredibly flavorful and aromatic. A chiffon cake is similar to an angel food cake, but is even more moist and fluffy thanks to the egg yolks and vegetable oil. To make it even more decadent, we like to top it all off with some luscious glaze. Delicious!
