Ingredients To Gather:
- 1 (1 1/4-ounce) slice white bread, torn into pieces
- 1/4 cup (1 ounce) grated Parmigiano-Reggiano cheese
- 1 tablespoon chopped fresh sage
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup all-purpose flour
- 1 tablespoon prepared mustard
- 2 large egg whites
- 4 (4-ounce) boneless thin-cut pork loin chops, trimmed
- 1 1/2 tablespoons canola oil
Directions To Follow:
- Start by placing the bread in a food processor and then pulsing 10 times or until there are about 1 cup of coarse breadcrumbs.
- Next, mix the breadcrumbs, cheese, sage, salt, and pepper in a shallow dish, put the flour in another shallow dish, and whisk together the egg whites and mustard in a third shallow dish.
- Dredge each pork chop in the flour and shake off any excess, followed by the egg white mixture (allow excess to drip off) and then dip it into the breadcrumb mixture and coat completely.
- Repeat these steps for each pork chop, and then heat a large nonstick skillet over medium heat, add oil and swirl around to coat, and add pork chops one at a time and cook for 3 minutes on each side or until browned and cooked completely through.

These pork chops are incredibly easy to make, but taste like something from a swanky restaurant. Plus, they go well with pretty much anything, from a salad to a couple of vegetable side dishes to perhaps some rich and hearty mashed potatoes.
