You’ll Never Guess Why They Call This Sandwich The Ultimate Grilled Cheese!

Here's everything you need for these decadent grilled cheese sandwiches. Feel free to use whatever types of cheeses you prefer, and mix and match until you get just the right combination!

Ingredients To Gather:

  • 12 slices thick-cut bacon, such as Nodine's applewood smoked
  • 1 cup good mayonnaise
  • 1/4 cup dijon mustard
  • 1/4 cup freshly grated parmesan cheese
  • Kosher salt and freshly ground black pepper
  • 1 white pullman loaf or sourdough bread, sliced 1/2 inch thick (12 slices)
  • 6 tablespoons salted butter, at room temperature
  • 6 ounces aged gruyere or comte cheese
  • 6 ounces extra-sharp cheddar, such as Cabot or Shelburne Farms

Directions To Follow:

Start by preheating your oven to 400 degrees Fahrenheit, and then placing the bacon in a single layer on top of a baking rack positioned over a sheet pan. Roast the bacon for between 20 and 30 minutes or until it's browned. Lay paper towels on top of a plate and lay the bacon on the towels to drain. After the bacon is drained, cut it into small pieces of about 1 inch. Next, in a small bowl mix the mayonnaise, mustard, parmesan, 1 1/2 teaspoons salt and 1/2 teaspoon pepper.

Lay out 12 pieces of break and butter each one, and then flip each piece over and spread with the mayonnaise mixture. Next, use a food processor to grate all of the cheese, using the largest grating disk. Lay the bacon evenly over half of the pieces of bread, and then sprinkle the grated cheese evenly on top of the bacon. About 1/3 cup of grated cheese should suffice. Now, use the rest of the bread to top what you just did, with the sauce side facing down. Finally, use a panini press to cook the sandwiches for between 3 and 5 minutes or until the cheese melts and the bread is tasty. You'll probably need to do this in batches. Let sandwiches cool for 2 minutes before serving.
