A Comforting Classic: Creamy Chicken Sausage, Tomato & Tortellini Soup!

The following recipe serves 8, cooks a total of thirty (30) minutes and that includes a simple five minute preparation time! This soup is just like the kind they serve at Olive Garden but it's fresher, heartier & you don't have to wait or pay for seconds!

Let's Get Started…

The Ingredients To Gather: 

  • Olive oil and 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 6 chicken sausage links, sliced
  • 4 cups chicken broth
  • 1 28 ounce can diced tomatoes, undrained
  • 1 14 ounce can tomato sauce
  • 1 large zucchini, sliced
  • 19 ounces frozen tortellini
  • 4 cups baby spinach
  • ½ cup heavy cream
  • ½ cup Parmesan cheese
  • ¼ cup fresh basil, roughly chopped
  • 2 Tablespoons fresh parsley, roughly chopped. Additional basil and Parmesan cheese for topping

The Step By Step Directions To Follow: 

  1. Coat the bottom of a large dutch oven with olive oil and heat over medium heat. Add onion and saute until softened, about 4 minutes. Add garlic and saute until fragrant. Add sliced chicken sausage and cook, stirring occasionally until heated through.
  2. Stir in chicken broth, diced tomatoes, and tomato sauce. Bring the mixture to a boil. Add zucchini and cook for 2 minutes, add frozen tortellini, cook for another 5 minutes or until tortellini is tender and hot clear through.

Remember to salt and pepper to taste!

Once you remove the mixture from the heat, stir in the spinach until wilted. the you will stir in the cream, Parmesan cheese, basil, and parsley.

Be certain to serve warm with additional fresh basil and Parmesan cheese for topping, if desired. You might also add your favorite toasted roll, maybe a nice piece of butter and garlic bread.
