Chickpea salad has been made so many different ways over the years. The reason why this adaptable salad has been tweaked over a hundred different ways is because no matter how you serve it the final result will be absolutely delicious.
The way I like my Chickpea Salad is with a lot of Lemon and Parmesan. I feel like the chickpeas marinate a little bit better this way and soak up more flavor. I can either have this dish at room temperature or chilled – whatever way I decide to serve it my family loves it and always begs for seconds.
Herbs are so important in this dish. I used Basil and Italian Parsley to give it an extra lift with a lot of garlic however, you can use whatever fresh springs you want.
