All The Bold Flavors Of Chili Without The Messy Assembly! This Dish Is Perfect For A Weekend Assembly

Are your taste-buds kicking into overdrive yet? Ours are… and we already had this for lunch. Oh yea, did we mention it's great as a work lunch? Pop that baby in a microwave safe Tupperware container and BAM…. your lunch just got magical!

List of Amazing (yet simple) Ingredients

1 lb of chicken, shredded or cut into small bite sized pieces. Everyone is different – you can use white meat, dark meat or a combination of both.
¾ cup of yellow onion (finely diced)
1 quart of chicken broth (we opt for low sodium to fight tummy bloat, but to each their own!)
1 tsp of oregano
1 tbs cumin
2 garlic cloves finely diced OR (if you're lazy like us) you can use 1 tsp of minced garlic
2 chopped bell peppers – pick any color you like!
3 cans of white beans (look for the 15oz great northern kind) thoroughly rinsed and drained of any excess liquid
…. and if you're up for a little spice, finely dice a jalapeno pepper. Remember, the seeds inside are HOT, so you can reduce the heat by removing the seeds prior to dicing them.

Cooking Directions

In a 4 or 6 quart slow cooker combine the chicken, onions, chicken broth, garlic, cumin and oregano.
Let cook a while on low (approx. 3-5 hours, depending on your schedule)
Add drained beans.
Now here is the important part if you don't want mushy chili.. Add the bell peppers and jalapeno peppers (if using) no earlier than the last hour or hour and a half before serving.
Top each serving with shredded Monterey jack cheese and or broken tortilla chips if desired.

One thing we added was fresh cilantro. At the very end when we add the cheese and tortilla chips, sprinkle a little cilantro on top. It adds an extra element of flavor to the mix and it's yummy.

And salt and pepper goes without saying. We recommend that you add this after you've cooked your chili so you get the measurements just right.
