An All-Around American Traditional Dinner Idea That Never Gets Old: Beef Pot Roast With Roasted Vegetables!

This beef pot roast recipe makes enough for ten servings so there will be plenty for you to enjoy. It takes two and a half ours to cook because you have to make sure the beef gets nice and tender and juicy.

The beef broth gives the roast an excellent flavor and gravy. The delicious smells will be enough to make your mouth water and have your kids waiting at the table just like you did when your Mom made it for you!

The Ingredients To Gather:

  • 1 teaspoon olive oil
  • 1 chuck roast
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cups onion
  • 1 cup red wine
  • 4 thyme sprigs
  • 3 garlic cloves
  • 1 can beef broth
  • 1 bay leaf
  • 4 carrots
  • 2 pounds potatoes
  • thyme leaves (optional)

 

The Step By Step Directions To Follow:

  1. Preheat oven to 350º.
  2. Heat oil. Sprinkle chuck roast with salt, pepper. Add roast to pan; cook 5 minutes. Remove roast from pan. Add onion, sauté 8 minutes.
  3. Return roast to pan. Add wine, thyme , garlic, broth, bay leaf, simmer. Cover, bake 1 1/2 hours
  4. Add carrots, potatoes. Cover, bake 1 hour.
  5. Remove thyme sprigs, bay leaf. Shred meat.
