Barbecuing A Rack Of Baby Back Ribs To Absolute Perfection Isn’t A Secret All You Need To Do Is THIS

The Ingredients To Gather:

  • 4 Granny Smith apples
  • 1/3 cup lemon juice
  • 1/2 cup light brown sugar
  • 1/2 teaspoon allspice
  • 1 teaspoon thyme leaves
  • 1 bay leaf
  • 2 tablespoons salt,
  • 1/4 tablespoon black pepper
  • 2 tablespoons chili powder
  • 1-1/2 tablespoon dried minced onion
  • 1 tablespoon garlic powder
  • 1-1/2 tablespoon smoked paprika
  • 1 teaspoon oregano
  • 2 slices bacon
  • 1 onion
  • 2 garlic cloves
  • 1/2 cup apple cider vinegar
  • 1/4 cup molasses
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 2 cups water
  • 3-1/2 to 4-pound rack of baby back ribs

The Step By Step Directions To Follow:

  1. Toss apples with lemon juice, 1/4 cup brown sugar, allspice, thyme, bay leaf, salt. Place in pan. Heat apples over “medium” heat until the liquid starts to simmer, adjust heat to “low.”
  2. Let apples cook 60 minutes – 90 minutes, until they have broken down and taken on a caramel color. Remove bay leaf, transfer apples to food processor. Puree until smooth. Store apple butter in covered container in refrigerator.
  3. Combine 1 tablespoon of salt, black pepper, chili powder, dried onion, garlic powder, smoked paprika, oregano, 1 tablespoon of brown sugar.
  4. Prep ribs night before grilling by patting them dry. Peel away membrane on back of ribs, discard.
  5. Rub spice mixture all over ribs. Wrap ribs in foil et them rest in the refrigerator eight hours.
  6. Cook bacon over medium heat until fat is rendered. Add onion, garlic to bacon fat, cook five minutes. add apple cider vinegar to pan, simmer. Add apple butter, molasses,
  7. Worcestershire sauce, yellow mustard, 1 teaspoon of salt. Pour in 2 cups of water . Boil, lower heat to simmer. Let sauce cook for 60 – 90 minutes.
  8. Remove ribs from refrigerator, let them come to room temperature 20 – 30 minutes.
  9. Preheat a gas grill to 350 degrees. Adjust heat so that it holds steady at 250 degrees. Place ribs on grates with burners turned off. Close lid, cook for two to two-and-a-half hours.
  10. If needed, rewrap ribs, continue grilling 30 minutes or so.
  11. Brush tops of ribs with sauce. flip ribs over, sauce-side down, cook t five minutes. Brush other side with sauce, flip again. Repeat three or four times at five-minute intervals.
  12. Rest ribs for five minutes.
