Baked potatoes are so amazingly delicious I could eat them as a whole meal if it was ok … and this twice baked potato casserole does just that! It takes all of the things you love about baked potatoes and turns it into a casserole!
I love the addition of the crispy, salty bacon — it adds a nice crunchy texture to the dish. And the potatoes! Oh, the potatoes. They are so creamy and amazing, especially with the addition of milk and sour cream to the recipe.
This dish can be served alone, as I mentioned earlier, or you can use it to jazz up a meal. I like serving scrambled eggs beside it for breakfast, or a nice New York steak for dinner.
