I try to run my household on a budget and though fish can be pricey there are many delicious inexpensive options. This list runs the gamut from high quality lobster tail to delicious, but budget friendly, tilapia.

  1. Seafood Lasagna

Everyone loves lasagna! This twist on an old Italian classic replaces regular old marina sauces with a creamy cheese sauce poured over noodles with chunks of your favorite seafood hiding under each layer. This recipe calls for shrimp, imitation crabmeat and scallops but if you could certainly make it all shrimp if you aren’t into scallops or crab. This one is great for a crowd, assemble in the morning and throw it in the oven an hour before your guests arrive!

Ingredients

  • 1 green onion, finely chopped

  • 2 tablespoons canola oil

  • 2 tablespoons plus 1/2 cup butter, divided

  • 1/2 cup chicken broth

  • 1 bottle (8 ounces) clam juice

  • 1 pound bay scallops

  • 1 pound uncooked small shrimp, peeled and deveined

  • 1 package (8 ounces) imitation crabmeat, chopped

  • 1/4 teaspoon white pepper, divided

  • 1/2 cup all-purpose flour

  1. Crab Mushroom Canapes

If you are looking for an appetizer with a seafood twist this next recipe is just for you! Don’t let the fancy name fool you, think of toasty French bread smothered in crabmeat, cream cheese and mushrooms. If you are in a rush you could always make the mixture and place it in a small skillet and put it under the broiler and serve it as a dip!

Ingredients

  • 1 pound Crab Meat

  • 1 Baguette

  • 2 cups Mozzarella Cheese

  • 1 pound Mushrooms

  • 1 bunch Green Onions

  • 4 ounces Cream Cheese

  1. Beer Battered Fish and Chips with Spicy Remoulade

This recipe had my husband and his friends toasting me with their frosted mugs of lager. Crispy fish fresh breaded with a spicy dipping sauce and homemade “chips.” If you don’t have a fryer that’s ok! I’ve used my cast iron skillet filled with a half an inch of oil, put on an apron and get some long tongs you’ll have to do some moving around but the end result is just as delicious.

  • 2 cups (250 grams) all-purpose flour

  • 1 teaspoon (4 grams) baking powder

  • 1 (12 ounce) (355ml) bottle of beer, any light colored beer

  • 1 teaspoon (8 grams) salt

  • 1 teaspoon (8 grams) freshly cracked black pepper

  • 1 teaspoon (8 grams) garlic powder

  • ½ teaspoon (4 grams) cayenne pepper

  • 1 cup (125 grams) all-purpose flour (this is for dredging)

  • 1½ pounds fresh cod fillets, cut into long strips (5 to 6 inches long)

  1. Roasted Salmon Stuffed with Feta and Ricotta

My husband doesn’t love salmon, so for me to get him to eat it I have to do a little sprucing. This recipe is his favorite because the fish is stuffed with two kinds of cheeses and spiced with Dijon mustard!

  • 1 (2-pound) center-cut boneless, skinless salmon fillet

  • 1 cup crumbled feta cheese

  • 1 cup ricotta cheese

  • 1/2 teaspoon fine sea salt, divided

  • 1/2 teaspoon ground black pepper, divided

  • 1 tablespoon Dijon mustard

  • 1 cup packed baby spinach, divided

  • 2 teaspoons extra-virgin olive oil, plus more for baking sheet

  • 2 teaspoons chopped fresh dill

  1. Lemon Ricotta Pasta with Seared Scallops

OK, I’ll admit it. I love cooking fish with ricotta! This creamy buttery pasta served with lemon scallops cooked with a slight pan crust is a great choice for an easy dinner in with your partner.

Ingredients

  • 1 box pappardelle or fettuccine pasta

  • 12 large fresh sea scallops

  • 4 tbsp good-quality olive oil, divided

  • 1 tbsp butter

  • Zest of 1 lemon

  • ¼ cup lemon juice

  • 1½ cups fresh green peas, shelled and blanched

  • 4 tbsp fresh thyme, minced (pref lemon thyme, if you have it)

  • Sea salt and freshly ground black pepper

  • 1 container (475g) ricotta cheese

  1. Spinach and Feta Stuffed Tilapia

Tilapia is a great affordable fish! We eat it in tacos, grilled with Cajun seasonings but when I made this tilapia rolled around a mixture of spinach, feta and you guessed it, ricotta, my husband informed me that I can no longer serve tilapia any other way.

Ingredients

  • 12-16 oz. tilapia fillets (4-6 thin fillets)

  • Pinch of salt and pepper

  • 1 egg, beaten

  • ½ cup part-skim ricotta cheese

  • ½ cup crumbled feta cheese

  • ½ cup bread crumbs

  • 1 cup fresh spinach leaves, chopped

  • ¼ tsp. salt

  • ¼ tsp. ground black pepper

  • ¼ tsp. dried thyme leaves

  • 1 large lemon

  1. Broiled Lobster Tail

Lobster can sound intimidating but it is actually quite easy to prepare. It doesn’t need much sprucing. This simple and easy recipe really brings out the flavor the sea’s most elegant shellfish. The best thing about lobster is it goes with everything!

Ingredients

2 fresh lobster tails

4 tablespoons (1/2 stick) unsalted melted butter, plus more for clarified butter (Annie also tells you how to clarify butter….)

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon white pepper

Salt, to taste

Fresh lemon wedges for garnish, plus lemon juice to taste
