Chicken Macaroni Salad – Just Like You Had It When Growing Up!

Here's everything you need for this flavorful chicken macaroni salad. What's great about this recipe is that it's easy to experiment with it. You can use different vegetables or add more or less of any of the ones listed here.

Ingredients To Gather:

  • 2 cups (8 oz.) dry elbow macaroni
  • 1 cup cooked, shredded chicken
  • ¼ cup grated carrots
  • ¼ cup finely chopped chives
  • ⅓ cup diced dill pickles
  • ¼ cup finely diced red bell pepper
  • ⅓ cup finely diced celery
  • ⅓ cup finely chopped black olives
  • ½ cup mayonnaise
  • 5 tablespoons milk
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons sugar

Directions To Follow:

Cook the macaroni in a large pot of lightly salted boiling water, and then drain it and rinse it in cool water. Set aside and in a small bowl combine the mayonnaise, milk, vinegar, mustard, sugar, salt and pepper. Whisk the mixture until smooth. Next, take the cooled macaroni and place it in a mixing bowl. Pour the dressing in the bowl and toss to coat. Finally, add the chicken, carrots, chives, pickles, bell pepper, celery and olives and stir to combine.

This recipe really takes you back to when you were a kid, doesn't it? You can serve this salad immediately or store it in the fridge until you're ready to use it. We like to keep some on hand because it makes a great snack or a quick lunch.
