Forget Chicken Noodle Soup! Let's take it up a notch and make this Chicken Noodle Casserole for dinner tonight!

I remember those cool fall nights as a child when we would come inside from a day of hard playing on the weekend and the house would smell of this wonderful dish that would make you salivate from the moment you walked in. We were hungry, cold and this one meal fixed everything!

The Chicken Noodle Casserole has been around for generations. I am honestly not quite sure how long it's been around or who first cooked it but whoever came up with this deserves all the recognition in the world for introducing us to such a comfort food masterpiece!

The simplicity of this dish makes it perfect for busy weeknights or lazy weekends and can really be enjoyed all year long, however, there is something about having it in the fall or winter that makes it that much more comforting. So let's take a look at what we will need in order to make it.

Ingredients:

1 (12-ounce) package egg noodles, cooked and drained

1 rotisserie chicken, shredded

2 (10-ounce) cans condensed cream of chicken soup

1 cup mayonnaise

1 cup milk

½ onion, finely diced

2 cups cheddar cheese, shredded

1 ½ cups frozen mixed veggies

1 cup panko bread crumbs

½ cup butter, melted
