Chicken Pot Pie For A Busy Weeknight: It Is Made In A Skillet In Minutes And Tastes Amazing!

This recipe makes enough for about six servings but if you want plenty leftover you can always double the ingredients. It takes about twenty minutes to prepare in the skillet and then about twenty minutes to bake in the oven. You'll won't have to wait long at all to try it!

The Ingredients To Gather:

1 tablespoon olive oil
1 1/2 pounds  chicken breasts
1  onion
1  bag frozen peas and carrots
2 cloves garlic
2 cups  chicken broth
3 tablespoons  flour
1/2 cup whole milk
Salt
black pepper
1 store-bought pie crust, thawed if frozen

The Step By Step Directions To Follow:

Preheat  oven to 400°F.

Heat olive oil in cast-iron skillet over medium-high heat. Add  chicken, season with salt, pepper, sauté , 5- 6 minutes. Transfer chicken to  plate.

Add  onion to  skillet. Sauté , 3 – 4 minutes. Add  peas, carrots, garlic, cook 1 minute more. Sprinkle in  flour, stir until  flour dissolves. Add  chicken broth, simmer,  stir, until thickened 8 – 10 minutes. Turn off  heat, stir in  milk,  season as needed with salt, pepper.

Add  chicken to  skillet, stir to combine. Unfold  pie crust, place over  top of  filling, tucking  excess edges inside  pan. cut 4 (1-inch) slits in top of crust to vent. Bake 20 minutes.
