We've Never Been Fans of Collard Greens…But We're Seeing Them in a Different Light Now!

We're longtime fans of Asian food, and one of our favorite Eastern treats is the spring roll. Similar to an egg roll, this traditional Asian dish features assorted vegetables wrapped in a flaky, tender roll of crispy dough. This version is a little different than what you might normally find at an Asian restaurant, however, because it uses collard greens. Who know they'd be so good in spring rolls? There's also plenty of tofu to make these bite-sized foods even more hearty and satisfying.

Plus, these spring rolls are incredibly simple and quick to make, requiring 30 minutes total time. They also make a healthy snack that proves you don't have to sacrifice taste for health! We like to make an extra large batch of these rich and delicious spring rolls, because they last up to 3 days in the fridge, and the sauce keeps between 5 and 7 days. This is just the kind of thing to have on hand when you've got the munchies and want something healthier than potato chips.
