Cool Off With These Peanut Butter Cup Popsicles

Here's everything you need to make these refreshing peanut butter cup popsicles. These sweet treats are the perfect way to chill out on a hot summer day!

Ingredients to Gather

8 ounces cream cheese, softened
¾ cup creamy peanut butter
⅔ cup powdered sugar
½ teaspoon vanilla extract
1 cup heavy cream
12 peanut butter cups
1 cup chocolate, chopped
2 tablespoons coconut oil

Directions to Follow

Using a hand mixer, beat together the cream cheese, peanut butter, powdered sugar, vanilla extract, and heavy cream until smooth and well-combined.
Spoon into 12 popsicle molds leaving a bit of space at the top, then tap molds on the counter to release any air bubbles that may remain.
Take a popsicle stick and carefully put through one peanut butter cup until one end of the stick is at the top of the chocolate cup.

Next, place the cup in the center of each mold, and then freeze for 4 hrs. or until it's firm. After this, run the popsicles under hot water for 30 seconds to remove them from the molds, carefully pulling the sticks until they release. Leave them in the freezer until it's time to dip them in the chocolate. Now, make the chocolate. To do this, microwave the chocolate and coconut oil together for 30 secs. at a time until smooth, stirring in between. Let cool for between 5 and 10 mins., and then dip each popsicle into the chocolate, immediately flipping it so that the chocolate drizzles down the popsicle. Place the popsicles on a baking sheet lined with wax paper, and freeze until ready to serve.
