Copycat Recipe: Dunkin Donuts French Cruller

Here's everything you need for these mouthwatering Dunkin Donuts French crullers. We recommend making a double batch because these donuts go fast!

Ingredients to Gather

1 cup hot water
6 tablespoons unsalted butter (85 grams), cut into cubes
1 cup all purpose flour
1 tablespoon granulated sugar
pinch of salt
3 large eggs, room temperature
2 egg whites, room temperature
vegetable oil for frying

Glaze:
1½ cup powdered sugar
2-3 tablespoons milk

Directions to Follow

Cut 12 squares of parchment paper, the squares must be approximately the size of your palm. They will be used to pipe the donuts onto.

Arrange them on a baking sheet and spray with baking spray. Set aside.

In a large medium bowl mix powdered sugar and milk until well combined.

The mixture must be smooth with no lumps and it should be a little thick, but still pourable. For a more transparent glaze, add one extra tablespoon of milk. For a thicker glaze add less milk. Set aside.

In a medium sauce pan over medium heat combine water, butter, granulated sugar and salt until completely incorporated and the butter is fully melted. Stir often.

After the butter melts, stir in 1 cup of flour with a wooden spoon and then quickly incorporate it into the butter mixture over medium heat. Cook for 2 minutes over medium heat, stirring constantly, and then pour the batter into the bowl of a stand mixer fitted with a paddle attachment and mix the batter on medium-high to cool it off.  Turn the speed down to medium, and then add the eggs one at a time and blend them into the mixture. Then add the egg whites and continue blending until the mixture is shiny and the ingredients are thoroughly combined.

Now, pour the mixture into a large pastry bag that's been fitted with a large star tip, and then use it to pipe donut rings onto the prepared paper squares. After this, take a heavy-bottomed saucepan and pour 2 to 3 inches of vegetable oil into it, and then heat until the oil reaches 370 degrees Fahrenheit. After this, turn the heat down to medium low and start frying the donuts. Use a spatula to place each donut into the pan with the parchment paper side facing up, and then fry for a few seconds before using chopsticks to remove the paper. Fry the donuts until they're puffy and golden brown, about a minute on each side. After that, take them out of the pan and place on a cooling rack, and then promptly spoon some of the glaze onto the donut. Repeat this process with the rest of the donuts, and let the glaze settle for 30 minutes before serving the donuts.
