Craving A Hamburger But Hate All The Calories & Don’t Want Fast-Food? Make This Savory Hearty Soup Instead

This delicious hamburger soup makes twelve servings so there is plenty for everyone to enjoy. It takes about fifteen minutes to prepare and about thirty minutes to cook. This soup will smell so good, you won't be able to resist digging right in!

Let's Get Started…

The Ingredients To Gather:

  • 2-1/2 pounds Ground Chuck
  • 1 Onion
  • 2 stalks Celery
  • 3 cloves Garlic
  • 1  Can Whole Tomatoes
  • 3 cups Beef Stock Or Beef Broth, Plus More As Needed
  • 1  Yellow Bell Pepper
  • 1  Red Bell Pepper
  • 1  Green Bell Pepper
  • 4  Carrots
  • 5 Red Potatoes
  • 3 Tablespoons Tomato Paste
  • 1/2 teaspoon Kosher Salt (more To Taste)
  • 1/2 teaspoon Black Pepper, More To Taste
  • 2 teaspoons Dried Parsley Flakes
  • 1/2 teaspoon Ground Oregano
  • 1/4 teaspoon Cayenne Pepper (more To Taste)

The Step By Step Directions To Follow:

  1. In a large pot over medium-high heat, brown the meat with the onion, celery, and garlic. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools.)
  2. Return the pot to the heat and add the rest of the ingredients. Stir to combine, then bring to a boil. Reduce the heat, then cover the pot and simmer the soup for 15-20 more minutes, until potatoes are tender.
  3. Soup should be somewhat thick, but if you'd like it to be more “soupy,” add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust seasonings, adding more salt if needed.

    You can also brown the hamburger, dump in a can of beef broth, a can of Veg-all, (canned tomatoes if you don’t have acid refulx like me) and heat and enjoy something very much like it without all the work. My mom did this all the time after dad passed away and I do also.

    Done this as a plain veg soup, with hamburger, with beef roast, with shredded leftoverchicken, even added macaroni, bowties, shells, broken spaghetti……… the veggies are just the soup base. Yommo.

    My Mothermade this all the time with no recipe she taught me and i taught my sons – now that I am confined to my bed i am reaping the benefits of my investments in them lol yesterday my son Derek made a delicious big pot of this and i ate till i was so stuffed – he was so pleased to see me eat
