- 2 stalks Celery
- 3 cloves Garlic
- 1 Can Whole Tomatoes
- 3 cups Beef Stock Or Beef Broth, Plus More As Needed

The Step By Step Directions To Follow:
- In a large pot over medium-high heat, brown the meat with the onion, celery, and garlic. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools.)
- Return the pot to the heat and add the rest of the ingredients. Stir to combine, then bring to a boil. Reduce the heat, then cover the pot and simmer the soup for 15-20 more minutes, until potatoes are tender.
- Soup should be somewhat thick, but if you'd like it to be more “soupy,” add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust seasonings, adding more salt if needed.

Looks Yummy
I just had a big bowl of this for lunch with fresh cornbread – perfect!
One of my favorites.
You can also brown the hamburger, dump in a can of beef broth, a can of Veg-all, (canned tomatoes if you don’t have acid refulx like me) and heat and enjoy something very much like it without all the work. My mom did this all the time after dad passed away and I do also.

Done this as a plain veg soup, with hamburger, with beef roast, with shredded leftoverchicken, even added macaroni, bowties, shells, broken spaghetti……… the veggies are just the soup base. Yommo.
I make mine with taco meat and any leftover meat I have. My kids and grand kids love it and have me make it all the time for them.
