Easy Bake Cheesy Chicken

Let me guess… Do you have absolutely no time to cook, have a bunch of mouths to feed or are you alway on the go with work and being a wife or mom?

If you answered any of the above or have a similar agenda then this dish will be a great addition to your home.

Being that my family loves chicken and spaghetti noodles this combination together, with a little extra ingredients, is a winning recipe in my home! In fact, they all like it so much, we have made it our “Easy dinner night” meal. Here is how I bake when there is no or little time. You should try it too!

 

Ingredients Needed:

  • 4 boneless skinless chicken breasts
  • Salt and pepper
  • 1⁄2 cup of Italian breadcrumbs
  • 1 large egg
  • 4 teaspoons of butter
  • 2 cups of spaghetti sauce
  • 8 slices of mozzarella
  • 2 cups of mushrooms
  • 1 tablespoon of grated Parmesan cheese
  • 4 cups of water

The Must Haves:

  • Meat tenderizer
  • Measuring cup
  • Large mixing bowl
  • Cutting board
  • Sharp knife
  • Large glass baking dish
  • Aluminum foil
  • 2 skillets
  • Strainer
  • 1 Boiling pan

 

Directions 

Step #1: Set the over to 375 degrees.

Step #2:With your knife and cutting board, cut the chicken breasts into fillets making a total of eight.

Step #3: Using your meat tenderizer, pound each chicken filler until the chicken is flat. Set aside.

Step #4: Measure 4 cups of water and pour into the boiling pan. Boil on high for about 10 minutes. Add in the spaghetti. Turn down the heat to medium and let boil. Stirring occasionally.

Step #5: While the spaghetti is boiling, mix together in large mixing bowl the egg, salt and pepper and bread crumbs. Stir together until egg is not visible.

Step #6: Using your cutting board, cut the mushrooms into small pieces and set aside when done.

Step #7:Using your skillet, place butter into the pan and melt on medium heat. Add in chicken breast fillets and let brown on one side for 10 minutes. Turn and brown the other side. Remove and set aside.

Step #8: Remove spaghetti from heat, drain into strainer and strain. Rinse well with cold water.

Step #9: In frying pan, place butter and mushrooms and saute for about 5 minutes. Be sure to constantly stir so that you don't burn the mushrooms. Set aside when cooked.

Step #10: Place spaghetti sauce in boiling pan and bring to a rolling boil for about 5 minutes. Lower the heat and set on simmer. Add in the chicken fillets and the mushrooms. Cover and simmer for 5 minutes on low heat.

Step #11: With your glass baking dish, layer spaghetti noodles evenly into the dish. Scoop about 1 cup of sauce form the chicken and mushroom mixture and pour over the noodles.

Step #12: Place the chicken fillets on top of the noodles, be sure to make enough room for all to fit.

Step #13: Place the mozzarella slices over the chicken making sure that the cheese completely covers the chicken.

Step #14: Pour the rest of the mushroom and spaghetti sauce mixture over the chicken and noodles.

Step #15: Sprinkle the grated Parmesan cheese evenly over the chicken and noodles. Cover with aluminum foil and place in the oven. Bake for 30 minutes. Remove from heat and let stand for 5 minutes.

Serve with bread sticks or garlic bread and enjoy.
