Ever since I was a child one of my absolute favorite foods to eat has been enchiladas. From the staple cheese enchilada to chicken or pork, red sauce, green sauce and even white sauce, spicy or mild, with so many variations, you can hardly go wrong. This fact has stayed true my entire life and now that I have kids of my own and could not be anymore true. My house consumes these easy tasty treats at least two to three times a month.
Now, like I mentioned earlier, the many types and styles of enchiladas is definitely what makes this classic Mexican dish appealing, it can also create some confusion when searching for that quick, simple recipe.
