Easy Soup to Add to Your Thanksgiving Feast

 

INGREDIENTS
  1. 2 cups of butternut squash, peeled and cubed
  2. 1 cup of low-fat coconut milk
  3. 1/4 cup of red onions, chopped
  4. 1 tablespoon of dried thyme
  5. 1 tablespoon of garlic, chopped
  6. 1 tablespoon of basil (fresh or dried)
  7. Salt and pepper to taste

 

You should have most of these items already in your pantry but if not don't fret as they are easy to find at any local grocery store. Now, for the super easy part.

 

INSTRUCTIONS
  1. Boil butternut squash for 20-25 minutes (or until tender). Set aside.
  2. In a blender, combine all ingredients except salt and pepper. Blend for a smooth consistency.
  3. Remove from blender, and in a medium sized pot, cook on low flame for 15-20 minutes.
  4. When done cooking, add salt and pepper to taste. Enjoy!
