Every Single Time We Cook Steak This Way It Comes Out 100 Percent Perfect!

You can use these tips to cook any steak that you want. They will take about thirty to thirty-five minutes to cook and ten minutes to rest. You won't want to wait to dig right in!

The Ingredients To Gather:

2 boneless strip steaks, 1 1/2 to 1 3/4 inches thick, 1 pound each
Kosher salt and  black pepper
1 tablespoon vegetable oil

The Step By Step Directions To Follow:

Adjust oven rack to middle position,  heat oven to 275°F. Pat dry. Cut each in half vertically to create four 8-ounce steaks. Season surface liberally with salt press sides of steaks until uniform 1 1/2 inches thick. Place  on wire rack set in rimmed baking sheet; transfer to oven. Cook until instant-read thermometer inserted in center of steak registers 90 – 95°F for rare to medium rare, 20 – 25 minutes, or 100 to 105 °F for medium, 25 – 30 minutes.
Heat oil in  skillet over high heat until smoking. Place steaks in skillet,  sear  1 1/2 – 2 minutes, lifting once halfway through to redistribute fat underneath each steak, turn steaks,  cook on second side, 2 – 2 1/2 minutes. Transfer  to  cooling rack,  reduce heat under pan to medium.  Stand 2 steaks on their sides. Holding steaks together, return to skillet,  sear on all sides 1 1/2 minutes. Repeat with remaining  steaks.
Transfer to cooling rack, let rest, loosely tented with foil, 10 minutes while preparing pan sauce. Arrange steaks on individual plates, spoon sauce over. pepper to your liking.
