This wonderful risotto makes enough for two to four servings but you can just double the ingredients if you need more. You can anything you like to this risotto to really make it your own. It takes about thirty minutes to cook so you won't have to wait long to start enjoying this delicious dish.

The Ingredients To Gather:
- 3 1/2 cups chicken stock
- 2 tablespoons olive oil
- 1 garlic clove
- 1 shallot
- Salt and pepper, to taste
- 1 cup arborio rice
- 2/3 cup dry white wine
- 1 cup Parmesan cheese
- Parsley for garnish, optional
The Step By Step Directions To Follow:
- Add stock to pot, set over medium-high heat until simmering but not boiling.
- Keep at steady simmer.
- Heat olive oil over medium heat.
- Add garlic, sauté until fragrant but not browned, about a minute.
- Add shallots, sauté 1 – 2 minutes.
- Add a pinch of salt, add rice, stir, tossing to coat all the rice and get lightly toasted, 30 seconds.
- Add wine, cook, stirring, until fully absorbed by rice.
- Add stock to rice, 1 ladleful at a time, allowing the rice to absorb all the liquid each time before adding more. This will take about 25 minutes total.
The Additional Directions To Follow:
- When the chicken stock is fully incorporated into the rice, make sure that you taste it. It shouldn't be crunchy.
- If it is just right, add some salt and pepper.
- Remove pot from the burner and shut the heat off.
- Then add in the cheese, making sure to stir it until the rice is nice and creamy.
- Top with some parsley if you wish.
