Here's everything you need for this decadent ice cream sandwich cake. It tastes best if you freeze it before serving, however, if you like it on the softer side that is okay too – we won't judge you!

Ingredients To Gather:

• 1 pint heavy cream
• 2 tbsp. sugar
• 1 sleeve Oreos, crumbled (plus more for topping)
• 1 package ice cream sandwiches

Directions To Follow:

1. Beat heavy cream and sugar until stiff peaks form, about 3-4 minutes. Fold in crumbled Oreos, setting aside about 2 tbsp for topping the cake. Set aside whipped cream mixture.
2. Line a loaf pan with parchment paper. Place a layer of ice cream sandwiches to cover the bottom of the pan. You may need to trim the sandwiches to fit the pan size.

4. Next, take half of the whipped cream mixture and use it to cover the ice cream sandwiches.

5. Top this with a layer of ice cream sandwiches followed by the rest of the whipped cream.

6. Take the crushed Oreo cookies and sprinkle them on top of the cake. Next, use the ice cream sandwich pieces to decorate the cake. If you want a cake that's lighter like a mousse, stick it in the fridge for 4 hours or until it sets.
