Everything Bagel Breakfast Bites

These instructions are pretty straightforward and while It may seem a lot its not really that much work. In fact, I bet after one session of making these you have the process memorized!
Directions
Divide the pizza dough into 8 even pieces and roll each one into a ball. Cover them with a kitchen towel or plastic wrap, and allow them to rise for 20 minutes.
Meanwhile, melt the butter in a large nonstick pan over medium heat. Season the eggs with salt and pepper to taste. Cook and scramble the eggs until they're done to your liking, then remove the pan from heat and add in the diced ham and shredded cheese.
Preheat the oven to 425°F/220°C. Line a nonstick baking sheet with parchment paper.
Gently flatten the balls of dough with your palm, and top each one with ⅛ of the egg mixture. Pull the sides of the dough up and around the filling and pinch the seams to seal. Place the balls seam-side down on the lined baking sheet and cover them with a kitchen towel or plastic wrap. Let the filled bagel bombs sit for 15 minutes.
While waiting, fill a large pot with 3 quarts of water and bring it to a gentle boil. Add the salt, baking soda, and honey to the boiling water. (Don't let the water boil too strongly to prevent the bagel bombs from ripping open.) Place a few of the dough bundles into the gently boiling water and boil them for about 1 minute (turn them over halfway through). Remove them with a slotted spoon and transfer them to the lined baking sheet. Repeat with the remaining bagel bombs.
Top each bagel bomb with everything bagel seasoning and bake them for 25 – 30 minutes, or until they're golden brown and cooked through.
Serve warm, or let them cool to room temperature, wrap them individually, and freeze them for later.
