Family Favorite: Chicken Divan Crêpes With Gruyère

This is everything you need for this hearty crepe recipe. Note that you can use either fresh or frozen broccoli. This is one of Oprah Winfreys favorite recipes!

Ingredients To Gather

  • 1 head of broccoli, cut into florets, or 1 (10-ounce) package frozen chopped broccoli, defrosted and drained well
  • 1 (3-pound) roasted chicken, boned and shredded
  • 1 (10 3/4-ounce) can cream of mushroom soup
  • 8 ounces Gruyère cheese, grated (2 cups)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup dry white wine
  • 1 1/2 tsp. fresh lemon juice
  • 1/2 tsp. curry powder
  • Salt and freshly ground black pepper
  • 1 (4.5-ounce) package prepared crêpes (10 crêpes), or homemade
  • Cooking spray
  • 1 cup grated Parmesan cheese (4 ounces)
  • 1/2 cup seasoned bread crumbs
  • 2 Tbsp. unsalted butter, melted

Directions To Follow

Begin by preheating your oven to 350 degrees Fahrenheit. Next, steam the fresh broccoli florets for between 3 and 5 minutes, then drain and place in a large bowl. Add the chicken and combine. Take another large bowl and mix the soup, cheese, mayonnaise, sour cream, wine, lemon juice, curry powder, salt and pepper. Add half of this to the broccoli and chicken. Next, places the crepes on a cutting board. Place the chicken mixture in the crepes, dividing it equally between them. Roll up the crepes and place into two casserole dishes coated with cooking spray. The seam of the crepes should be facing down. Pour the remaining soup mixture over the top of the crepes and then combine the Parmesan, bread crumbs, and butter and use this mixture to top the crepes. Bake between 25 and 30 minutes. You'll know the crepes are done when they're bubbly.

    Allergic to MSG which is in all canned soups, plus the huge amount of salt which makes my whole body feel bloated.
