We adore onions — both raw and cooked. They're loaded with flavor and add a little extra flair to nearly any dish. There's just one thing we don't like about onions, however, and that's the fact that chopping them makes us cry. This is a common occurrence, because onions contain synthase, an enzyme that causes the release of sulfenic acid into the air. This is precisely what causes the involuntary teary eyed response.
