Enchiladas are seriously one of my favorite foods. I would probably eat them every week, if I could get the rest of the family to get on board with eating Mexican food as much as I crave it. The tortilla is the perfect vessel for holding all of that shredded meat that's loaded with flavor. I love how the enchilada sauce adds to the robust flavor profile and how it remains balanced with the creaminess of the cheese. Isn't it the best when it comes out of the oven and the enchiladas close to the edge of the pan have an added crunch? Those ones are definitely my favorite.

I've tried fancy enchiladas, unconventional enchiladas and I always seem to keep coming back to the classic recipe as my go-to.
