For some of my friends, making spaghetti at home means grabbing a box of pasta and a jar of sauce from the grocery store. For me, I absolutely love making a rich hearty sauce from scratch. I love using this recipe and then modifying it slightly to mix it up, so it doesn't taste the same every time I make it. Sometimes I add heavy cream to make it a vodka sauce or I add sausage or meat to bulk it up for the boys.
No matter what I do to change up this recipe, every time I make it I am transported to Italy. After you make this meal for your family, you will know exactly how I feel. And if you have a pasta maker, I high suggest you make your pasta from scratch for the ultimate dining experience at home.

Yup. Learned the red wine trick years ago from a little italian lady that ran the local grocery store. It makes a world of difference! Delicious!!
The difference is the Merlot wine added. At least, I’ve never seen any recipes for meat sauce with it before now.

I have used red wine and a rind of the Parmesan cheese in my sauce for years. But I swear it looks like meat in that sauce and nothing is mentioned in the recipe.

yeah my grandmother always used wine in her sauce and cooked her meat in wine too the only difference is we use cajun spices to make sauce hot mmmmmmmmmmmmmm

1/2 tsp of baking soda will cut acidity (I just did this) or they say throw a carrot in it while it’s simmering.
She says that she sometimes adds sausage or meat or whatever. And the picture definitely shows meat
Sorry Stacy Paoletti I’m italian and I put two tablespoons of sugar in my sauce.
I make sauce by 4 gallon lots. 3 bulbs o’ garlic, 2 bottles wine, shredded carrots and sugar to take the acidity from the tomatoes and wine, the finished with a quart of heavy whipping cream.
OREGANO! NEVER! Tastes like dirt!
Victoria Mcphillips you can also add a tiny bit of baking soda. It completely neutralizes the acid from the tomato if you put too much and isn’t tasty at all. Start with 1/8 tsp. Soda before instead of after. 🙂
usually depending on what part of italy you grew up sauces are totally different northern italians use sugar in sauce southern like wine ,so my first cooking teacher told me he was from sicily

I always put wine in my sauce but never chicken bouillon–and I’m 100% Italian.
Yes! Red wine makes a huge difference.also saute finely chopped carrots and celery.yes sounds weird and yucky,bit oh the taste it brings.you saure the carrots and celery withchopped onions,minced garlic.add red wine and let it reduce a little.
I recently had pasta sauce that I thought had cinnamon in it. Now I know I am not crazy it was actually a nice touch.
Cinnamon is delicious too. Haven’t tried red wine.
You’d have never thought to add red wine to an Italian red sauce?? Why??? It’s always been there. Some in the sauce, some in the glass.
My son-in-law makes a delicious pasta sauce with red wine. It makes the sauce so much richer-tasting! Yum!
