Five Ways to Prepare Salmon

Salmon with Spring Veggies

4 (6-ounce) boneless, skinless salmon fillets
Kosher salt, to taste
Freshly ground pepper, to taste
2 large eggs
1 small shallot, minced
1 small garlic clove, minced
2 tablespoons red wine vinegar
3 tablespoons olive oil
8 ounces asparagus, trimmed and halved crosswise
1 cup shelled English peas
1/2 cup coarsely chopped and loosely packed herbs such as basil, mint, tarragon, chervil, and/or flat-leaf parsley

Salmon Chowder

2 (8-ounce) salmon fillets
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup butter
1 cup chopped onion
1/2 cup chopped celery
3 tablespoons all-purpose flour
3 cups chicken broth
1/2 teaspoon salt
1 pound red potatoes, cut into 1/2-inch pieces
1 (9-ounce) package frozen corn, thawed
2 cups half-and-half

Sesame Soy Salmon

1/3 cup light brown sugar
1/4 cup soy sauce
2 teaspoons rice wine vinegar
2 (6-ounce) salmon fillets

1 teaspoon sesame oil

These are just a handful of the many delightful salmon recipes out there! Pretty much anything you can make with chicken you can substitute with salmon. Follow the directions and once again, I can't stress this enough, make sure you have FRESH fish or pre-packaged frozen fish. If you are feeling really creative go grab that fishing pole and head out to catch some fish of your own, hands down the best fish you will ever have! But we will save that for a later article!
