Forget Tradition: These Dippers Are The Best Way To Enjoy This American Classic & We Can’t Stop Eating Them

Ingredients To Gather:

  • 4 tbsp. butter
  • 1 onion, finely diced
  • 1 Garlic clove, minced
  • 28 oz. crushed tomatoes
  • 3 c. chicken (or vegetable) stock
  • 1/4 c. heavy cream
  • Fresh basil, for serving
  • 8 slices white bread, crusts removed
  • 8 slices cheddar cheese
  • kosher salt
  • Freshly ground pepper

Directions To Follow:

Make the soup first. To do this, start by melting 1 tbsp. of butter over medium heat in a large pot. Next, add the onion and cook for 2 or 3 minutes or until it begins to soften. After this, add the tomatoes, the stock, 1/2 tsp. pepper and then bring to a boil and simmer for 15 minutes. While the soup is simmering, prepare the grilled cheese roll-ups. To do this, roll bread into flat squares measuring 1/4 inch using a rolling pin. Place a slice of cheese on top of each piece of bread and roll up tightly. Next, melt 1 tbsp. of butter over medium heat in a large nonstick skillet and add the grilled cheese roll-ups to the skillet in batches with the seam side facing down. Cook for about 3 minutes or until all sides are golden and the cheese is melted, turning each roll-up frequently. Use a paper towel to wipe the skillet clean and then add more butter between batches. Add the cream to the soup and stir, and then ladle into bowls and garnish with basil.
