Goat Cheese Bacon Pops are the Perfect Appetizer, They’re So Amazing!

This appetizer makes enough for about twelve servings but if you need more, you can always double the ingredients. They take about twenty-five minutes to prepare. These are sure to be one appetizer everyone will want again and again!

The Ingredients To Gather: 

6 slices bacon
4 ounces goat cheese
4 ounces cream cheese
1 tablespoon mild honey
Pinch dried chili flakes (optional)
1/3 cup dried cherries (cranberries, blueberries, or other tart dried fruit works well.)
1/2 cup lightly packed fresh herbs
1/2 cup unsalted pecan halves

The Step By Step Directions To Follow:

1  In a skillet over medium heat, cook  bacon until crispy. Drain on  paper towel.
2  In a food processor, combine goat cheese, cream cheese, honey, chili flakes, a pinch of salt, a pinch of pepper. Blitz for  30 seconds,  scrape down  sides of  bowl, pulse a few more times to fully combine. Transfer to ll bowl, freeze  10 – 20 minutes, until firm but not frozen solid.

3  While the cheese mix is chilling, clean your food processor to make your filling. Place  dried cherries in the food processor, blend in 1-second pulses until hopped into tiny bits. Add herbs, pulse another 5 or so times. Add bacon, pecans, pulse until  mixture looks crumbly. Do not over-mix or you will end up with bacony nut butter. Transfer coating to bowl.

4  Remove  cheese mixture from freezer, roll into twelve little balls. Wetting your hands in cool water helps to cut down on the mess.

5  Gently press coating into cheese to make it stick.

6 Stick a small stick or skewer into your cheese balls and store in the fridge until you’re ready to serve. The pops are best the day they are made, but will keep just fine in the fridge for several hours before serving.
