Mashed Potatoes are one of our go-to side dishes because they go well with pretty much anything. However, even rich and creamy Mashed Potatoes can get a little boring after a while, so we're always looking for ways to add a creative new twist to this beloved dinnertime favorite. That's why we were thrilled to find this recipe for Skordalia, a Greek dip that uses Mashed Potatoes, garlic and several other spices and seasonings to create a mouthwatering and satisfying dip that's just perfect for having with soft and warm pita bread.

In addition to the seasonings, this recipe has a few other things that make it a step above traditional Mashed Potatoes. For starters, rinsing the potatoes before and after cooking removes surface starch so the potatoes don't turn out gummy when they're pureed. Plus, combining the garlic with vinegar or lemon juice preserves the garlic's flavor but makes it a little pungent.
