Have You Made Chicken Cacciatore In Your Slow Cooker? This Rustic Italian Dish Is Simple, Yet Traditional

This delicious chicken recipe makes enough for about six servings but you can double or triple the ingredients if you want plenty left over to enjoy again. You can use whatever peppers and other vegetables you want, just make sure to slice them pretty thick so they don't fall apart when they are cooking in the oven. This recipe uses chicken thighs but you can any pieces of chicken that you wish.

The Ingredients To Gather: 

  • 1 pound Pasta Or Egg Noodles
  • 8 whole Chicken Thighs, Skin On
  • Salt And Black Pepper
  • 1/2 cup Flour
  • 4 Tablespoons Olive Oil
  • 2 Tablespoons Butter
  • 1 Onion
  • 2  Red Bell Peppers
  • 2  Green Bell Peppers
  • 5 cloves Garlic
  • 12 ounces Mushrooms
  • 1/2 teaspoon Thyme
  • 1/4 teaspoon Turmeric
  • 1/2 teaspoon Kosher Salt
  • Red Pepper Flakes
  • 3/4 cups Dry White Wine
  • 1 can Whole Or Diced Tomatoes
  • Chopped Flat Leaf Parsley
  • Parmesan Cheese for serving

The Step By Step Directions To Follow: 

  1. Preheat oven to 350 degrees F.
  2. Cook pasta according to package directions.
  3. Salt and pepper both sides of the pieces of chicken. Dredge chicken in flour. Heat olive oil and butter over medium-high heat. Place chicken skin down in pan. Brown chicken on both sides. Pour off half the fat in the pan and discard.
  4. Add onions peppers, garlic. Stir around for 1 minute. Add mushrooms and stir around for 1 minute. Add thyme, turmeric, and sal Add extra black pepper to taste. Stir, then pour in wine. Allow to bubble.
  5. Pour in tomatoes and stir to combine. Add chicken back into the pan, skin side up, Place lid on the pot and put it into the oven for 45 minutes. Remove lid and increase heat to 375 degrees. Cook for an additional 15 minutes.
  6. Remove pan from the oven. Remove chicken from the pot. Remove vegetables from pot and place them on a plate. Return pot to burner and turn heat to medium high. Cook and reduce sauce for a couple of minutes.
  7. Pour cooked noodles on a large platter. Add vegetables all over the top, then place chicken pieces on top of the vegetables. Spoon juices over the chicken and pasta.
